  • Utilization of plant-based protein sources in food, especially in legumes (Fabaceae) such as common beans, chickpeas, cowpeas, and mung beans.
  • Processing of legumes to achieved desired techno-functional properties, including physiochemical properties and digestion behaviour.
  • Studies of volatile compounds (that could contribute to flavour) in legumes and other foodstuffs.
